This is essentially a yogurt-based mango smoothie that serves a purpose: its tangy, cooling qualities are perfect for balancing spicy food. The success of a lassi depends entirely on the quality of the mango; you need very ripe, sweet, non-fibrous fruit for the best flavor and texture.

Ingredients
1 1/2cupsripe Ataulfo or Honey mango chunksfresh or frozen
1cupfull-fat Greek yogurtcold
1/2cupwhole milkcold
2tbsphoney
1tspfresh lime juice
1/4tspground cardamom
A pinch of saffron threads
A pinch of Diamond Crystal kosher salt
Method
Blend mango chunks, milk, honey, lime juice, cardamom, saffron and salt until smooth.
Add cold Greek yogurt and blend 30-45 seconds until just combined.
Taste and adjust sweetness with more honey if needed.
Thin with extra cold milk if too thick.
Pour into glasses and serve immediately cold.
Notes
Use cold ingredients for best texture.Do not overblend after adding yogurt.
