Mango Lassi

This is essentially a yogurt-based mango smoothie that serves a purpose: its tangy, cooling qualities are perfect for balancing spicy food. The success of a lassi depends entirely on the quality of the mango; you need very ripe, sweet, non-fibrous fruit for the best flavor and texture.

Ingredients

  • 1 1/2 cups ripe Ataulfo or Honey mango chunks fresh or frozen
  • 1 cup full-fat Greek yogurt cold
  • 1/2 cup whole milk cold
  • 2 tbsp honey
  • 1 tsp fresh lime juice
  • 1/4 tsp ground cardamom
  • A pinch of saffron threads
  • A pinch of Diamond Crystal kosher salt

Method

  • Blend mango chunks, milk, honey, lime juice, cardamom, saffron and salt until smooth.
  • Add cold Greek yogurt and blend 30-45 seconds until just combined.
  • Taste and adjust sweetness with more honey if needed.
  • Thin with extra cold milk if too thick.
  • Pour into glasses and serve immediately cold.

Notes

Use cold ingredients for best texture.
Do not overblend after adding yogurt.
