Crockpot Chicken Taco Soup

Ingredients
~1 lb boneless
skinless chicken thighs

minced garlic

can chili beans
16-oz, undrained

can black beans
15-oz, drained and rinsed

can southwestern corn
15.25-oz, undrained

can mild diced green chiles
4-oz, undrained
1
can fire-roasted diced tomatoes
14.5-oz, undrained

chicken broth

ground chili powder

Salt and pepper
Method
Place chicken thighs in 6-quart slow cooker.
Add garlic, all beans, corn, chiles, tomatoes, and broth.
Add all seasonings and stir to combine.
Cook on high 2.5-3.5 hours until chicken is tender OR 3-5.5 hours on low.
Remove chicken, shred with forks, return to pot.
Stir and adjust seasonings before serving.
Notes
All canned ingredients except black beans should be undrained.
