Crockpot Chicken Taco Soup

This soup gets its deep, savory flavor from chili beans, which are canned in a seasoned sauce - this simple ingredient adds a layer of richness to the crockpot broth without any extra steps.

Ingredients

  • ~1 lb boneless skinless chicken thighs
  • 1 tbsp minced garlic
  • 1 can chili beans 16-oz, undrained
  • 1 can black beans 15-oz, drained and rinsed
  • 1 can southwestern corn 15.25-oz, undrained
  • 1 can mild diced green chiles 4-oz, undrained
  • 1 can fire-roasted diced tomatoes 14.5-oz, undrained
  • 1 1/2 cups chicken broth
  • 2 1/2 tsp ground chili powder
  • 3/4 tsp ground cumin
  • 3/4 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Salt and pepper

Method

  • Place chicken thighs in 6-quart slow cooker.
  • Add garlic, all beans, corn, chiles, tomatoes, and broth.
  • Add all seasonings and stir to combine.
  • Cook on high 2.5-3.5 hours until chicken is tender OR 3-5.5 hours on low.
  • Remove chicken, shred with forks, return to pot.
  • Stir and adjust seasonings before serving.

Notes

All canned ingredients except black beans should be undrained.
