Agua de Limon con Chia

This is a classic Mexican agua fresca. The chia seeds absorb the limeade and swell into gelatinous pearls, creating a unique texture that's incredibly refreshing. The most important part of the process is how you add the chia seeds; if you just dump them in, they will form a solid, clumpy mass at the bottom of the pitcher.

Ingredients

  • 8-10 limes about 1 cup, juiced
  • 12 cups room temperature water
  • 1/2 cup sugar or to taste
  • 3 Tbsp chia seeds

Method

  • Juice limes to yield 1 cup juice.
  • Combine lime juice, water and sugar in large pitcher, stirring until sugar dissolves.
  • Slowly pour in chia seeds while stirring constantly to prevent clumping.
  • Let mixture rest 30 minutes until seeds become soft and gelatinous.
  • Stir well and serve over ice.

Notes

Keep stirring while adding chia seeds to prevent them from clumping at the bottom.
