Mango Lassi Recipe
This is essentially a yogurt-based mango smoothie that serves a purpose: its tangy, cooling qualities are perfect for balancing spicy food. The success of a lassi depends entirely on the quality of the mango; you need very ripe, sweet, non-fibrous fruit for the best flavor and texture.


Ingredients
- 1 1/2 cups ripe Ataulfo or Honey mango chunks, fresh or frozen
- 1 cup full-fat Greek yogurt, cold
- 1/2 cup whole milk, cold
- 2 tbsp honey
- 1 tsp fresh lime juice
- 1/4 tsp ground cardamom
- A pinch of saffron threads
- A pinch of Diamond Crystal kosher salt
Blend the Lassi
The order of operations matters for the final texture.
In a blender, combine the mango chunks, cold milk, honey, lime juice, cardamom, saffron, and salt. Blend on high until the mango is completely pureed and the mixture is smooth.
Add the cold Greek yogurt to the blender and blend again on high for just 30-45 seconds, until everything is combined. Don’t over-blend after adding the yogurt; it can thin out the consistency.
Check Consistency and Serve
Taste the lassi. If your mango wasn’t very sweet, you might want to add a little more honey.
The consistency should be thick but drinkable. If it’s too thick to pour easily, add another splash of cold milk and blend for a few seconds.
Pour into glasses and serve immediately. This drink is at its best when it’s icy cold.

- Add cold Greek yogurt and blend 30-45 seconds until just combined.
- Taste and adjust sweetness with more honey if needed.
- Thin with extra cold milk if too thick.
- Pour into glasses and serve immediately cold.
