Agua de Limon con Chia Recipe
This is a classic Mexican agua fresca. The chia seeds absorb the limeade and swell into gelatinous pearls, creating a unique texture that’s incredibly refreshing. The most important part of the process is how you add the chia seeds; if you just dump them in, they will form a solid, clumpy mass at the bottom of the pitcher.


Ingredients
- 8-10 limes, juiced (about 1 cup)
- 12 cups room temperature water
- 1/2 cup sugar, or to taste
- 3 Tbsp chia seeds
Juice the Limes and Dissolve the Sugar
In a large pitcher, combine the fresh lime juice, room temperature water, and sugar.
Stir everything together until you can’t see any sugar granules at the bottom of the pitcher.
Add the Chia Seeds and Let Them Hydrate
While stirring the limeade, slowly pour in the chia seeds.
Stirring as you pour is important to keep them from clumping together at the bottom.
Let the pitcher sit for at least 30 minutes. This is the most important step for getting the texture right. You’ll see the seeds absorb the liquid and become soft and gelatinous.
Give it a final stir before serving over ice.
